When I got of my flight I was starving, asked my driver for recommendations and they replied with Cochinito. Wow, really good. Very friendly and knowledgeable servers, quality food, fast ticket times, good vibes and the old fashion grab and go fridge is a nice touch. Definitely coming back.

Been wanting to try this place forever! This place is definitely pricey for Tacos so keep that in mind. Don't be that guy that after ordering and paying you go, "oh why was that so expensive?" It's a ritzy taco bar. That's what they're selling. Tacos are amazing. Can't go wrong with the $20 taco plate. The Ceviche is delicious, but is so rinky dink in portion size. Jazz it up a bit gents. Hot sauce/house table sauce is lacking. Get some heat going peoples! They charge wayyyyy to much for chips & salsa. Weak sauce indeed. Overall I'd recommend for a try. It's not the best taco you'll ever have. It's def fancy. But it was fun.

I really enjoy this place, from the food to the drinks you can't go wrong. The party started with 3 tacos 20 hr steak, feed Mushrooms, pork cheek and this ginger cocktail, when I say party in my mouth/ Joygasm. Oh and I added the chips and salsa too for my delight. So at this point I'm full but still reading the menu, I'm thinking these wings sound amazing and I can make more them along with two more cocktails and a steak taco. The folks who worked there were really nice too and the music hit the spot. It's a vibe worth splurging for. Pics to follow

We are in Spokane for my wife's Immersion - which tasks us with finding something delicious for dinner each night. Tonight, we had Cochinito Taqueria and the food was everything we were desiring. To start the customer service was amazing. Shayne took our order and not only was he immensely knowledgeable but his helpful commentary on the menu and warm presence immediately made us excited. We happened to stop in during Happy Hour making all of our tacos a dollar off and we also happened to catch the Pork Belly right before their menu switched over to the Fall menu. You order before you seat and they have the cutest cards to signify which table you are at - a touch that adds the eloquently integrated cultural developments. We ordered a total of 8 tacos (3 of them being the Pork Belly - no shame there), 2 Agua Frescas, and an order of Churros. Heritage Duroc Pork Cheek Carnitas 9/10 This taco was light and still packed flavor. I would've liked a bit more of the cheese, but the flavor in each component held its own. The carnitas were seasoned very well Lamb Merguez 10/10 The flavor profile of this taco was so unique the mint chutney adds the perfect hit to compliment the hazelnut salsa mach and it finished with the quest fresco made for both a fresh and flavorful bite. 20 HR Carne Asada 10/10 Tender, fall to pieces in your mouth, fully flavorful meat all sat in this taco. The corn even adhered to the flavor of the meat and overall had a beautiful presentation and flavor in each bite. The juices of the meat also surrounded the shell of the taco and held all of the flavors in one. Pescado 6/10 I can tell that this taco is the perfect taco for someone if you like a hint of sweet to your flavor. The rockfish alone did not carry a lot of flavors, but the Chile mango gel was a bit much for me. Pork Belly 10/10 We legitimately cannot believe we will not have access to this taco starting tomorrow due to the menu turning over. The succotash and the pepitas topped with the most delicious and flavorful chimichurri made this a treat that we had to have multiple. Beef Short Rib Birria 10/10 Matched with a consommé that had its own flavor, this taco was a warm burst of flavor and perfection. The short rib definitely deserves the notoriety it earned from both Shayne and everyone else who came in after us singing its praises along with the Pork Belly. While there weren't a ton of ingredients, the flavors flowed together with perfect execution. Churros w/ Cajeta 10/10 Those churros were magical. As a churro they held their own and had the perfect blend of cinnamon and their flavor. The Cajeta was the perfect addition, its sweetness served as a compliment to the cinnamon and the fact that they were fresh and warm sealed the deal. We have a few more days in Spokane and we will definitely have to stop in again before we go. So happy to have found a spot with amazing customer service and delicious flavorful food.

We always eat at Cochinito Taqueria when we visit Spokane. The menu is outstanding! The service is quite good. The only thing that bothers me is the location - and that is NOT their fault!! The homeless situation downtown Spokane is worrisome, and for that I'm sorry to say. We go to Cochinito anyway, but for how long? Anyway, go during the daytime.

We were very surprised at how good this Mexican food was (coming from California, Mexican food expectations out of state are always lowered). This is more your 'elevated' Mexican cuisine opposed to your gritty hole in the wall place. The service was excellent and there's a variety of food to choose from. The birria tacos were flavorful and the chips and salsa/guacamole was a good snack. We enjoyed the cool air conditioning and ice cold water refills. It's a little pricey for a large party but you get a decent amount of food and don't leave hungry. We'd come back.

Still fantastic. Some time has passed since I was last at Cochinito Taqueria. The first time we were able to walk up to the counter and immediately order. This time there was a line to the door - that's a great problem to have and definitely worth the wait - the line went quickly. Our order: Tuna Ceviche, Charred Spanish Octopus, and several tacos: Pork Cheek Carnitas, Pork Belly Pibil, 20 Hour Carne Asada, Beef Short Rib Birria, Lamb Merguez, and Pescado. I said this in my previous review or Cochinito, and I still feel this way, it's the best tacos in Washington (that I've tried). There's one place near the Pike Place Market, Maiz, which offers delicious tacos - however, this is just an elevated experience which excel in all preparations. I was recently in Paso Robles, which touts Michelin-star and Michelin-watch restaurants and the food I had I had in Spokane, between Cochinito and Zona, were decidedly better by myself and my group. The Tuna Ceviche was refreshing and vibrant - lots of textures and flavors that complemented each other so well. The Charred Spanish Octoupus is one of the best preparations of Octopus that I've had in quite some time. Great flavor and texture with a nice supporting cast of olives, chorizo, potatoes, and peppers. Completely unexpected, but very much welcomed. The tacos, fantastic. The tortillas, best I've had in Washington. Only once place has come close. The preparation of the proteins and the accompaniments leave no need for a salsa; however, the verde and rojo offerings (on the side) are good. The 20 Hour Carne Asada was unexpectedly tender and such a different Carne Asada experience than I'm used to. While I didn't get as much of the grill/char that I've had with other preparations, it was incredibly tender and juicy. Really good. I think my two favorites were the pork preparations: Pork Cheek Carnitas and Pork Belly Pibil. The pork in both was incredibly tender, nearly melting, nice sweetness (Pibil) and acidity (Carnitas), that complemented the fattiness of the pork. Really good. The Birria was fantastic and I could drink the consume. I remember the first time having Birria and this took me back to that experience, but that taco was better. The Pescado and Lamb were very good. The lamb was like a "Mexican Gyro." It was fun. While the Pescado was fresh and light. Next time I come back, I would try all of them again + the tacos I didn't try. Fantastic. Must try.

I must have walked passed Cochinito a hundred times but finally stopped in - WHY DID I WAIT SO LONG?!?! Some of the best gourmet street tacos I've ever had. The Heritage Duroc Pork Cheek Carnita taco was so delicious that I may just order that next time. One of the best carnitas I've had. But I also had the Lamb Merguez, 20 Hr Carne Asada, and the Beef Short Rib Birria - all of which were fantastic and would be hard to pass up, especially that Carne Asada; so tender! Add in a simple yet perfectly executed house marg and bam, I can't wait to be back! PRO TIP: They are a hair pricy for the size of taco (still worth it though), so come during Happy Hour which is daily from 3-5:30pm. It's $1 off draft beer, that house marg, and any menu items with a "H" by them on the menu.
